Ingredients
  

  • 2 pounds lean beef stew meat
  • 4 medium carrots sliced
  • 3 potatoes diced
  • 1 onion chopped
  • 2 cloves garlic minced
  • 3 cups beef broth
  • 1 can 14.5 oz diced tomatoes
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste

Method
 

  1. Brown the beef stew meat in a skillet over medium heat.
  2. Transfer the browned beef to the crockpot.
  3. Add chopped vegetables: carrots, potatoes, and onions to the crockpot.
  4. Stir in minced garlic, diced tomatoes, and tomato paste.
  5. Pour in the beef broth and sprinkle thyme and rosemary.
  6. Season with salt and pepper to taste.
  7. Cover and set the crockpot to low for 6-8 hours or high for 3-4 hours.
  8. Check for tenderness and adjust seasoning before serving.
