Prepare the chicken by cutting it into bite-sized cubes.
In a large mixing bowl, combine olive oil, garlic, Parmesan, herbs, salt, and pepper to create the marinade.
Add the chicken cubes to the marinade, tossing to coat evenly. Cover and marinate for at least 30 minutes, or up to overnight in the refrigerator.
If using, soak wooden skewers in water during the marinating process to prevent burning.
Preheat the grill or oven to a medium-high heat (about 400°F).
Thread the marinated chicken onto the soaked skewers, making sure not to overcrowd them.
Place the skewers on the grill or a baking sheet if using the oven, and cook for about 12-15 minutes, turning occasionally.
Once cooked, remove from heat and let them rest for a few minutes before serving.
