Preheat your oven to 350°F (175°C).
In a large mixing bowl, combine the sugar and cinnamon.
Dice the apples and toss them in the sugar-cinnamon mixture.
Cut the biscuit dough into quarters and add to the bowl.
Melt the butter and add it to the biscuit mixture, along with the vanilla and salt.
Gently toss until all the biscuits are coated.
Spray a bundt pan with non-stick cooking spray.
Layer half of the biscuit mixture at the bottom of the bundt pan.
Spread half of the diced apples over the first layer.
Add the remaining biscuit mixture and top with the final apples.
Bake in the preheated oven for 30-35 minutes.
Cool for 10 minutes before inverting.
Serve warm and enjoy with family and friends.
