- Prep the carrots by washing and peeling them.
- In a large skillet, melt the butter over medium heat.
- Add minced garlic and sauté for about 1 minute until fragrant.
- Stir in the honey, salt, and pepper, then add the carrots.
- Cover the skillet and cook for about 10-15 minutes, stirring occasionally.
- Uncover, increase heat, and cook for another 5-7 minutes until the sauce thickens.
- Remove from heat, and sprinkle with fresh parsley if desired.
- Serve warm and enjoy!
