Preheat your oven to 375°F (190°C).
In a large bowl, combine the prepared stuffing mix, shredded turkey, cream of mushroom soup, garlic powder, salt, and pepper.
Lay a tortilla on a flat surface and spread a layer of the stuffing mixture evenly over it.
Sprinkle shredded cheese on top of the stuffing before rolling the tortilla tightly.
Repeat with the remaining tortillas and stuffing mixture.
Place the rolled tortillas seam-side down in a greased baking dish.
In a separate bowl, whisk together milk and any remaining soup to create the gravy, then pour over the roll-ups.
Cover the baking dish with aluminum foil and bake for 25 minutes.
Remove foil and bake an additional 10-15 minutes until golden and bubbly.
Allow to cool for a few minutes before serving.
