Savory Stuffed Chicken with Bacon and Mozzarella

Tender chicken is beautifully stuffed with savory bacon and melty mozzarella, creating a mouthwatering dish ideal for family dinners or special occasions.

Ingredients
  

  • 4 boneless skinless chicken breasts
  • 8 slices of bacon
  • 1 cup shredded mozzarella cheese
  • 1 cup fresh spinach chopped
  • 2 cloves garlic minced
  • 1 teaspoon dried Italian seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1/2 cup chicken broth

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. In a pan over medium heat, cook the bacon until crispy. Remove and let it cool before chopping.
  3. In the same pan, sauté garlic until fragrant, then add chopped spinach and cook until wilted.
  4. In a bowl, mix together the cooked bacon, sautéed spinach, mozzarella cheese, and Italian seasoning.
  5. Using a sharp knife, make a pocket in each chicken breast. Stuff each pocket with the filling mixture.
  6. Season the stuffed chicken breasts with salt and pepper, and drizzle olive oil over them.
  7. In an oven-safe skillet, sear the chicken breasts on medium-high heat for about 3-4 minutes per side until golden brown.
  8. Transfer the skillet to the preheated oven and bake for 20-25 minutes or until the chicken is cooked through.
  9. Once cooked, remove the skillet from the oven and let the chicken rest for 5 minutes before serving.
