Ingredients
  

  • 1 pound ground beef
  • 2 medium sweet potatoes diced
  • 1 tablespoon olive oil
  • 1 bell pepper diced (any color)
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1 cup black beans drained and rinsed
  • 1/2 cup corn frozen or canned
  • Fresh cilantro for garnish optional

Method
 

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced onions and bell peppers to the skillet.
  3. Stir in minced garlic, cooking for 1 minute.
  4. Add the ground beef to the skillet, breaking it apart with a spoon.
  5. Season the beef with salt, pepper, cumin, and chili powder.
  6. Add diced sweet potatoes, stirring to combine.
  7. Cover the skillet and reduce heat to low, cooking for about 10-15 minutes.
  8. Stir in black beans and corn, cooking for an additional 5 minutes.
  9. Taste and adjust seasoning as necessary.
  10. Garnish with fresh cilantro before serving.
