Ingredients
  

  • 2 cups sushi rice
  • 2 1/2 cups water
  • 1 pound fresh salmon skinless and boneless
  • 1/4 cup mayonnaise
  • 2 tablespoons soy sauce
  • 1 tablespoon sriracha optional
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1/4 cup green onions chopped
  • 1 tablespoon furikake seasoning
  • Nori sheets cut into strips (for serving)

Method
 

  1. Preheat the oven to 375°F (190°C).
  2. Rinse the sushi rice under cold water until the water runs clear.
  3. Combine the rinsed rice and water in a rice cooker and cook according to the manufacturer's instructions.
  4. Once the rice is cooked, transfer it to a bowl and mix in rice vinegar and 1 tablespoon of sesame oil while fluffing the rice with a fork.
  5. In another bowl, mix the salmon, mayonnaise, soy sauce, sriracha (if using), and the remaining sesame oil.
  6. In a baking dish, spread the cooked sushi rice evenly as the base.
  7. Layer the salmon mixture over the rice, spreading it evenly.
  8. Sprinkle furikake seasoning and chopped green onions over the top.
  9. Bake in the preheated oven for 25-30 minutes or until the top is golden brown.
  10. Remove from the oven and let rest for a few minutes before serving.
  11. Serve warm with nori strips for wrapping or alongside a salad.
