In a mixing bowl, combine the softened cream cheese, shredded cheddar cheese, and hot pepper jelly.
Add in the fresh herbs and mix until combined well.
Form small balls from the cheese mixture, about 1 inch in diameter.
Roll each ball in the beaten egg, then in the crushed crackers or breadcrumbs.
Arrange the coated balls on a baking sheet lined with parchment paper.
Bake in the preheated oven for 20-25 minutes or until golden brown.
Remove from the oven and let cool slightly before serving with additional hot pepper jelly.
