Ingredients
  

  • 1 whole chicken 3-4 lbs
  • 5 cloves of garlic minced
  • 2 tablespoons fresh rosemary chopped
  • 2 tablespoons fresh thyme chopped
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 lemon zested and quartered

Method
 

  1. Preheat the oven to 425°F (220°C).
  2. Prepare the herb mixture.
  3. Rinse the chicken and pat it dry.
  4. Rub the herb mixture all over the chicken.
  5. Stuff the lemon quarters inside the chicken.
  6. Place the chicken in a roasting pan.
  7. Roast the chicken for 1 hour and 15 minutes.
  8. Check for doneness using a meat thermometer.
  9. Let the chicken rest before carving.
