  • 1 lb Brussels sprouts
  • 4 strips bacon
  • 2 tablespoons olive oil
  • Salt to taste
  • Freshly ground black pepper to taste

Method
 

  1. Preheat the oven to 400°F (200°C).
  2. Trim the ends off the Brussels sprouts and cut them in half.
  3. In a large bowl, toss the Brussels sprouts with olive oil, salt, and pepper.
  4. Chop the bacon into small pieces.
  5. Spread the Brussels sprouts and chopped bacon on a baking sheet in a single layer.
  6. Roast in the preheated oven for 25-30 minutes, stirring halfway through.
  7. Check for doneness; the Brussels sprouts should be browned and tender.
  8. Remove from the oven and toss before serving.
