Ingredients
  

  • 16 oz ziti pasta
  • 2 tablespoons olive oil
  • 1 onion diced
  • 3 cloves garlic minced
  • 1 bell pepper diced
  • 2 cups spinach chopped
  • 2 cups mushrooms sliced
  • 1 zucchini diced
  • 28 oz can crushed tomatoes
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese

Method
 

  1. Preheat the oven to 375°F (190°C).
  2. Cook ziti pasta according to package instructions until al dente.
  3. Heat olive oil in a large skillet over medium heat. Add the onion and sauté until translucent.
  4. Add minced garlic, bell pepper, spinach, mushrooms, and zucchini. Cook until vegetables are tender.
  5. Stir in crushed tomatoes, oregano, basil, salt, and pepper. Simmer for 5 minutes.
  6. Combine the cooked ziti with the vegetable sauce mixture in a large bowl.
  7. Transfer the mixture to a greased baking dish. Top with mozzarella and Parmesan cheese.
  8. Bake in the preheated oven for 25–30 minutes, until the cheese is bubbly and golden.
  9. Let cool for 5–10 minutes before serving.
