Ingredients
  

  • 1 medium butternut squash about 2-3 lbs
  • 1 cup fresh cranberries
  • 3/4 cup feta cheese crumbled
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon dried thyme

Method
 

  1. Preheat the oven to 400°F (200°C).
  2. Prepare the butternut squash by peeling, seeding, and cubing it into 1-inch pieces.
  3. Toss the cubed squash with olive oil, salt, pepper, and dried thyme in a large bowl.
  4. Spread the seasoned squash in a single layer on a baking sheet.
  5. Roast in the preheated oven for 25-30 minutes, stirring halfway through.
  6. Add the cranberries to the baking sheet during the last 10 minutes of roasting.
  7. Remove the baking sheet from the oven, sprinkle with crumbled feta, and let it cool slightly.
  8. Serve warm as a side dish or a main course and enjoy!
