Ingredients
  

  • 2 tablespoons olive oil
  • 1 onion diced
  • 2 cloves garlic minced
  • 3 carrots sliced
  • 2 stalks celery chopped
  • 1 zucchini diced
  • 1 bell pepper diced
  • 4 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon turmeric
  • Salt and pepper to taste
  • 2 cups spinach

Method
 

  1. Heat olive oil in a pot over medium heat.
  2. Add diced onion and sauté until soft and translucent.
  3. Stir in minced garlic for about 30 seconds.
  4. Add sliced carrots and chopped celery, cooking for about 5 minutes.
  5. Incorporate the diced zucchini and bell pepper, cooking for an additional 5 minutes.
  6. Pour in vegetable broth and stir in thyme and turmeric.
  7. Bring the mixture to a boil, then reduce to a simmer for 10 minutes.
  8. Add spinach and season with salt and pepper, cooking for 2 more minutes.
