Ingredients
  

  • 6 large egg yolks
  • 3/4 cup granulated sugar
  • 1 cup lemon juice freshly squeezed
  • 2 cups mascarpone cheese
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract
  • 24 ladyfinger cookies
  • 1/2 cup lemon syrup made from lemon juice and sugar
  • Zest from 1 lemon
  • Mint leaves for garnish

Method
 

  1. Prepare the lemon syrup.
  2. Whisk egg yolks and sugar together.
  3. Add lemon juice to the egg mixture.
  4. Incorporate the mascarpone cheese.
  5. Whip heavy cream until soft peaks form.
  6. Fold the whipped cream into the mascarpone mixture.
  7. Dip ladyfingers in lemon syrup.
  8. Layer the tiramisu.
  9. Chill in the refrigerator.
  10. Garnish and serve.
