Ingredients
  

  • 2 cups cooked jasmine rice
  • 1 pound boneless chicken thighs diced
  • 2 tablespoons vegetable oil
  • 1 cup mixed frozen vegetables peas, carrots, corn
  • 3 green onions thinly sliced
  • 3 cloves garlic minced
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • Salt and pepper to taste

Method
 

  1. Prepare the rice in advance and cool it.
  2. Heat the Blackstone griddle to medium-high.
  3. Add the vegetable oil and let it heat.
  4. Add the diced chicken and cook until browned.
  5. Incorporate the minced garlic and frozen vegetables; stir-fry for a few minutes.
  6. Push the chicken and vegetables to one side of the griddle.
  7. Add the cooked rice to the vacant space and drizzle with soy sauce and sesame oil.
  8. Mix in sliced green onions and adjust seasoning with salt and pepper.
  9. Remove from heat and serve hot.
