Ingredients
  

  • 1 cup graham cracker crumbs
  • 1/4 cup unsalted butter melted
  • 12 oz cream cheese softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups diced apples
  • 1/2 teaspoon cinnamon
  • 1/4 cup brown sugar
  • 1/2 cup old-fashioned oats
  • 1/4 cup all-purpose flour

Method
 

  1. Preheat the oven to 325°F (165°C).
  2. Prepare the crust by combining graham cracker crumbs and melted butter. Press the mixture into the bottom of mini cheesecake pans.
  3. In a mixing bowl, beat the softened cream cheese and granulated sugar until smooth.
  4. Add the eggs and vanilla to the cream cheese mixture, beating until well combined.
  5. Spoon the cheesecake filling over the prepared crust in the mini cheesecake pans.
  6. Bake in the preheated oven for 20-25 minutes until the edges are set but the center still slightly jiggles.
  7. While the cheesecakes cool, prepare the apple topping by sautéing diced apples with cinnamon, brown sugar, and oats in a pan.
  8. Once the apples are cooked, add them on top of the cooled cheesecakes, spreading them evenly.
  9. Prepare the crisp topping by mixing oats, flour, and brown sugar in a bowl, then sprinkle over the apple layer.
  10. Return to the oven and bake for an additional 10-15 minutes until the topping is golden and crisp.
  11. Let the mini cheesecakes cool completely before removing from the pans, and refrigerate for at least an hour.
