Ingredients
  

  • 4 chicken thighs
  • 1 cup basmati rice
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 bell pepper diced
  • 1 can diced tomatoes
  • 2 cups chicken broth
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley chopped (for garnish)

Method
 

  1. Sauté the onion, garlic, and bell pepper.
  2. Brown the chicken thighs.
  3. Add rice and tomatoes.
  4. Pour in chicken broth and season.
  5. Simmer and cover.
  6. Rest, then fluff and garnish.
