Make-Ahead Breakfast Casserole for Busy Mornings

Breakfast Casserole made approachable with clear cues, pantry staples, and flexible swaps.

Ingredients
  

  • 1 loaf of bread cubed
  • 8 large eggs
  • 2 cups milk
  • 1 cup shredded cheese cheddar or your choice
  • 1 cup diced cooked ham or sausage
  • 1 bell pepper diced
  • 1 cup chopped spinach or kale
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, whisk together eggs, milk, salt, black pepper, and garlic powder.
  3. Add the cubed bread to the egg mixture and stir until coated.
  4. Fold in the diced ham or sausage, bell pepper, spinach, and one cup of cheese.
  5. Pour the mixture into a greased 9x13-inch baking dish and spread evenly.
  6. Sprinkle the remaining cheese on top of the casserole.
  7. Bake in the preheated oven for 45-55 minutes, or until the center is set and golden.
