Ingredients
  

  • 2 pounds baby potatoes
  • 1/4 cup olive oil
  • 2 tablespoons fresh lemon juice
  • Zest of 1 lemon
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 tablespoon fresh rosemary chopped
  • 1 tablespoon fresh thyme chopped

Method
 

  1. Preheat your oven to 425°F (220°C).
  2. Wash the baby potatoes thoroughly and cut them in half if they're larger than bite-sized.
  3. In a large bowl, combine olive oil, lemon juice, lemon zest, salt, pepper, rosemary, and thyme.
  4. Add the potatoes to the bowl and toss until fully coated with the mixture.
  5. Spread the potatoes in a single layer on a baking sheet lined with parchment paper.
  6. Roast the potatoes for 30-35 minutes, flipping halfway through.
  7. Once roasted, remove from the oven and let them rest for a few minutes before serving.
