Ingredients
  

  • 1 ¾ cups all-purpose flour
  • 1 cup granulated sugar
  • ½ cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2 large eggs
  • ½ cup vegetable oil
  • 1 teaspoon pure vanilla extract
  • ½ cup buttermilk
  • 1 teaspoon peppermint extract
  • 1 cup semi-sweet chocolate chips
  • ½ teaspoon crushed peppermint candies

Method
 

  1. Preheat the oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
  2. In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking soda, and salt.
  3. In another bowl, combine the eggs, oil, buttermilk, vanilla, and peppermint extract, mixing until smooth.
  4. Pour the wet mixture into the dry ingredients and stir until just combined.
  5. Fold in the chocolate chips gently until evenly distributed.
  6. Pour the batter into the prepared loaf pan and sprinkle with crushed peppermint candies on top.
  7. Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the loaf to cool in the pan for 10 minutes before transferring to a wire rack.
