Spread the cheesy mixture evenly over half of the Ritz crackers.
Top with the remaining Ritz crackers, pressing down gently to secure them in place.
Place the assembled crackers on a baking sheet lined with parchment paper.
Bake in the preheated oven for 10-12 minutes or until the cheese is bubbly and the crackers are golden.
Remove from the oven and sprinkle with chopped chives or green onions while still warm.
