Ingredients
  

  • 2 cups mashed sweet potatoes
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. Mash the sweet potatoes until smooth and set aside.
  3. In a large mixing bowl, combine the granulated sugar, brown sugar, and vegetable oil.
  4. Add the mashed sweet potatoes, eggs, and vanilla extract to the sugar mixture, and mix well.
  5. In a separate bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt.
  6. Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
  7. Pour the batter into a greased loaf pan.
  8. Bake for 60-70 minutes or until a toothpick inserted into the center comes out clean.
  9. Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack.
  10. Slice and serve the bread once completely cooled.
