Ingredients
  

  • 2 pounds russet potatoes
  • 14 ounces smoked sausage
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream
  • 1 packet ranch seasoning mix
  • 2 tablespoons olive oil
  • 1/2 cup green onions chopped
  • Salt and pepper to taste

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. Wash and chop the russet potatoes into bite-sized cubes.
  3. In a large bowl, toss the cubed potatoes with olive oil, salt, and pepper until well coated.
  4. Spread the seasoned potatoes evenly on a baking sheet and roast for 25-30 minutes or until golden brown.
  5. While the potatoes are roasting, slice the smoked sausage into bite-sized pieces.
  6. Heat a skillet over medium heat and add the sliced sausage, cooking until browned.
  7. In a mixing bowl, combine the roasted potatoes, browned sausage, ranch seasoning, sour cream, and half of the shredded cheese.
  8. Transfer the mixture into a greased baking dish.
  9. Top with the remaining cheese and bake for an additional 15-20 minutes.
  10. Remove from the oven and let it cool slightly before adding chopped green onions.
  11. Serve warm and enjoy your loaded cheesy ranch potato bake!
