  • 4 large eggs
  • 100 g granulated sugar
  • 75 g all-purpose flour
  • 30 g unsweetened cocoa powder
  • 1 tsp baking powder
  • 40 g unsalted butter melted
  • 60 ml brewed espresso or strong coffee
  • 200 ml heavy cream
  • 40 g powdered sugar
  • 2 tbsp chocolate syrup optional

Method
 

  1. Prepare the oven and pan.
  2. Whip the eggs and sugar.
  3. Combine dry ingredients.
  4. Fold dry and wet ingredients.
  5. Pour batter into the prepared pan.
  6. Bake the sponge.
  7. Cool the cake.
  8. Roll the cake.
  9. Make the filling.
  10. Unroll the cake and add filling.
  11. Re-roll and chill.
  12. Slice and serve.
