Ingredients
  

  • 1 box yellow cake mix
  • 1/2 cup unsalted butter melted
  • 1 large egg
  • 1 can 15 oz pumpkin puree
  • 1 cup cream cheese softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon pumpkin pie spice
  • 1/4 teaspoon salt
  • 1/2 cup chopped pecans optional

Method
 

  1. Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking pan.
  2. In a large bowl, combine the yellow cake mix, melted butter, and egg. Mix until smooth and fully combined, then pour into the prepared baking pan.
  3. In another bowl, beat together the pumpkin puree, cream cheese, powdered sugar, vanilla extract, pumpkin pie spice, and salt until smooth and creamy.
  4. Pour the pumpkin cream cheese mixture over the cake batter in the pan, gently spreading it out so it covers the surface evenly.
  5. Sprinkle chopped pecans over the top if desired. They will add texture and a beautiful finish to the cake.
  6. Bake the cake in the preheated oven for 40-45 minutes, or until the edges are set and the center remains slightly jiggly.
  7. Remove from oven and allow to cool for at least 15 minutes before slicing. Serve warm or at room temperature, topped with whipped cream if desired.
