Ingredients
  

  • 4 medium sweet potatoes peeled and cubed
  • 4 tablespoons olive oil
  • 4 cloves garlic minced
  • 1 cup grated Parmesan cheese
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley chopped (for garnish)

Method
 

  1. Preheat your oven to 425°F (220°C).
  2. Prepare sweet potatoes by peeling and cutting them into uniform cubes.
  3. In a large bowl, combine cubed sweet potatoes, minced garlic, olive oil, paprika, salt, and pepper. Toss to coat evenly.
  4. Spread the sweet potato mixture in a single layer on a baking sheet lined with parchment paper.
  5. Roast in the preheated oven for 20-25 minutes, flipping halfway through.
  6. Remove from oven and sprinkle with grated Parmesan cheese.
  7. Return to the oven and roast for an additional 5-10 minutes until the cheese is bubbly and golden brown.
  8. Remove from the oven, garnish with fresh parsley, and serve warm.
