Spread the sweet potato mixture in a single layer on a baking sheet lined with parchment paper.
Roast in the preheated oven for 20-25 minutes, flipping halfway through.
Remove from oven and sprinkle with grated Parmesan cheese.
Return to the oven and roast for an additional 5-10 minutes until the cheese is bubbly and golden brown.
Remove from the oven, garnish with fresh parsley, and serve warm.
