Ingredients
  

  • 1 lb ground turkey
  • 1 tablespoon olive oil
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 large whole wheat tortillas
  • 1 cup shredded lettuce
  • 1 large tomato diced
  • 1/2 avocado sliced
  • 1/2 cup shredded cheese cheddar or Mexican blend
  • Sour cream or Greek yogurt for serving

Method
 

  1. Heat olive oil in a skillet over medium heat.
  2. Add diced onion and garlic, sauté for 3-4 minutes until softened.
  3. Add ground turkey to the skillet, breaking it up with a spoon.
  4. Stir in chili powder, cumin, smoked paprika, salt, and pepper; cook for 2-3 minutes.
  5. Remove from heat and let the mixture cool slightly.
  6. Lay tortillas flat and place desired amounts of turkey mixture down the center.
  7. Top with shredded lettuce, diced tomatoes, sliced avocado, and cheese.
  8. Drizzle sour cream or Greek yogurt over the top (optional).
  9. Fold the sides of the tortilla over the filling, then roll it up tightly from the bottom.
  10. Serve immediately with extra toppings on the side.
