Combine the rinsed rice with water in a rice cooker or pot and cook according to the instructions.
Preheat your oven to 350°F (175°C).
In a bowl, mix together the mayonnaise, sriracha, soy sauce, and sesame oil.
Fold the diced salmon, green onions, and rice vinegar into the cooked rice.
Spread the rice mixture evenly in a greased baking dish.
Spread the spicy mayonnaise mixture over the rice layer.
Sprinkle breadcrumbs generously on top of the mayonnaise layer.
Bake for 25-30 minutes until the top is golden brown.
Remove from the oven and let it cool for a few minutes before serving.
Serve warm with nori sheets for scooping.
