Ingredients
  

  • 4 medium sweet potatoes diced
  • 1 can 15 oz black beans, drained and rinsed
  • 1 cup corn kernels fresh or frozen
  • 1 red bell pepper diced
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1 tablespoon olive oil
  • Salt and black pepper to taste
  • Fresh cilantro chopped (for garnish)

Method
 

  1. Heat olive oil in a large skillet over medium heat.
  2. Add chopped onions and bell peppers; sauté for 5-7 minutes until softened.
  3. Stir in minced garlic; cook for an additional 1 minute.
  4. Add diced sweet potatoes, chili powder, cumin, salt, and pepper; stir to coat.
  5. Cover and cook for 10-15 minutes, stirring occasionally, until sweet potatoes are tender.
  6. Mix in black beans and corn; cook for another 5 minutes until heated through.
  7. Adjust seasoning with more salt and pepper if necessary; remove from heat.
  8. Garnish with fresh cilantro before serving.
