  • 1 cup dried black-eyed peas
  • 4 cups water or vegetable broth
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1-2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste

Method
 

  1. Soak the black-eyed peas overnight in water.
  2. Drain and rinse the soaked peas before cooking.
  3. In a large pot, heat olive oil over medium heat, then add chopped onions.
  4. Add minced garlic to the pot and sauté for an additional minute.
  5. Stir in the soaked black-eyed peas, smoked paprika, and water or broth.
  6. Bring the mixture to a boil, then reduce the heat to low and cover.
  7. Simmer for 30-45 minutes, or until the peas are tender and creamy.
  8. Season with salt and pepper to taste before serving.
