Ingredients
  

  • 1 whole turkey 12-14 lbs
  • 4 cups buttermilk
  • 1/2 cup olive oil
  • 1/4 cup maple syrup
  • 1/4 cup Dijon mustard
  • 4 cloves garlic minced
  • 2 tablespoons fresh rosemary chopped
  • 1 tablespoon fresh thyme chopped
  • Salt and pepper to taste

Method
 

  1. Prepare the marinade in a large bowl.
  2. Season the turkey inside and out with salt and pepper.
  3. Place the turkey in a large resealable bag or container.
  4. Pour the marinade over the turkey and seal.
  5. Preheat the oven to 325°F (165°C).
  6. Remove the turkey from the marinade and pat dry.
  7. Roast the turkey for approximately 2.5 to 3 hours.
  8. Let the turkey rest before carving, about 20-30 minutes.
  9. Carve and serve the turkey.
