Ingredients
  

  • 1 pound dried black eyed peas
  • 4 cups chicken broth
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1/2 pound smoked ham hock or diced bacon
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper
  • Salt and pepper to taste
  • 2 tablespoons chopped fresh parsley optional

Method
 

  1. Rinse and soak the black eyed peas overnight.
  2. In a large pot, combine the soaked peas, chicken broth, chopped onion, and garlic.
  3. Add the smoked ham hock or bacon, smoked paprika, and cayenne pepper.
  4. Bring the mixture to a boil, then reduce the heat and simmer for 1-1.5 hours.
  5. Stir occasionally and check the consistency.
  6. Season with salt and pepper, and adjust to your taste.
  7. Serve hot, garnished with fresh parsley if desired.
