Add eggs one at a time, mixing well after each addition, then stir in vanilla extract.
In another bowl, whisk together flour, baking powder, and salt. Gradually add the dry mixture to the wet ingredients, mixing until just combined.
Fold in chocolate chips gently until evenly dispersed.
Scoop tablespoon-sized portions of dough onto a parchment-lined baking sheet, spacing them about 2 inches apart.
Sprinkle decorative sprinkles on top of each cookie before baking.
Bake for 10–12 minutes or until the edges are golden brown.
Allow cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
