Delightful Reindeer Cupcakes for Seasonal Cheer

Easy Reindeer Cupcakes Jenny Cookies made approachable with clear cues, pantry staples, and flexible swaps.

Ingredients
  

  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • ½ cup unsweetened cocoa powder
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 2 large eggs
  • ½ cup vegetable oil
  • 1 tsp vanilla extract
  • 1 cup powdered sugar
  • 4 oz cream cheese
  • Red candies for Rudolph's nose
  • Chocolate pretzels for antlers
  • Mini M&M's for eyes

Method
 

  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with paper liners.
  2. In a mixing bowl, combine the all-purpose flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, whisk together the eggs, vegetable oil, and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Divide the batter evenly among the cupcake liners, filling each about two-thirds full.
  6. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let the cupcakes cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
  8. In a bowl, beat cream cheese and powdered sugar together until smooth and creamy for the frosting.
  9. Once cooled, frost the cupcakes using a piping bag or a spatula.
  10. Decorate with red candies for noses, chocolate pretzels for antlers, and Mini M&Ms for eyes.
