Delightful Peppermint Swirl Cookies to Enchant Your Tastebuds

Peppermint Swirl Cookies made approachable with clear cues, pantry staples, and flexible swaps.

Ingredients
  

  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1/2 cup powdered sugar
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon peppermint extract
  • 1/2 cup red and green sprinkles optional

Method
 

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a bowl, whisk together the flour, baking powder, and salt; set aside.
  3. In a separate large bowl, cream the softened butter, granulated sugar, and powdered sugar until light and fluffy.
  4. Add the egg, vanilla extract, and peppermint extract to the butter mixture, and mix until well combined.
  5. Gradually add the dry mixture to the wet mixture, mixing until just combined.
  6. Divide the dough in half. In one half, mix in the red and green sprinkles, and in the other, add more peppermint extract if desired for stronger flavor.
  7. Roll each half of the dough into logs about 1.5 inches in diameter, wrap in plastic wrap, and freeze for 30 minutes.
  8. Remove the logs from the freezer, and slice them into 1/2-inch thick rounds.
  9. Place the sliced cookies on the prepared baking sheets, spacing them about 2 inches apart.
  10. Bake in the preheated oven for 10-12 minutes, or until the edges are set but the centers are still slightly soft.
  11. Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring to wire racks.
  12. Once cooled, enjoy or store in an airtight container.
