Ingredients
  

  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1/2 cup unsalted butter softened
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup buttermilk
  • 3 cups powdered sugar
  • 1 cup butter softened
  • 2-3 tbsp milk
  • Green food coloring
  • Decorative sprinkles or candies

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, cream together the softened butter and sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition. Include the vanilla extract.
  4. In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, alternating with buttermilk. Begin and end with the dry ingredients.
  6. Divide the batter into a lined cupcake tin, filling each liner about two-thirds full.
  7. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  8. Let the cupcakes cool completely before frosting.
  9. In a medium bowl, beat together softened butter and powdered sugar until creamy.
  10. Add milk gradually until desired consistency is reached, then mix in the green food coloring.
  11. Pipe the green frosting onto the cooled cupcakes in a cone shape to resemble Christmas trees.
  12. Finish each tree with decorative sprinkles, candies, or a dusting of powdered sugar for snow.
