Method
- In a large mixing bowl, combine rolled oats, nut butter, and honey.
- Add in the dark chocolate chips, dried cranberries, salt, and vanilla extract.
- Refrigerate the mixture for 15–30 minutes to firm up.
- Once firm, scoop out tablespoon-sized portions and roll them into balls.
- Store in an airtight container in the refrigerator for up to one week.
