Preheat the oven to 425°F (220°C).
Prepare the carrots by peeling and cutting them into sticks.
In a large bowl, mix honey, olive oil, minced garlic, salt, and pepper.
Add the carrot sticks to the bowl and toss until evenly coated.
Spread the coated carrots in a single layer on a baking sheet lined with parchment paper.
Roast in the oven for 25–30 minutes, tossing halfway through.
Remove from the oven and let cool slightly before serving.
Garnish with fresh thyme or parsley if desired, and serve immediately.
