Ingredients
  

  • 12 ounces cheese tortellini
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1/2 cup red onion diced
  • 1/2 cup black olives sliced
  • 1/4 cup fresh basil chopped
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Method
 

  1. Cook the tortellini according to package instructions.
  2. Drain and rinse the tortellini under cold water.
  3. In a large bowl, combine the tortellini, tomatoes, cucumber, red onion, black olives, and basil.
  4. In a separate bowl, whisk together olive oil, red wine vinegar, Italian seasoning, salt, and pepper.
  5. Pour the dressing over the salad and toss gently to combine.
  6. Sprinkle grated Parmesan on top before serving.
  7. Serve immediately or refrigerate for an hour to allow flavors to meld.
