Preheat your oven to 400°F (200°C).
In a bowl, mix together the mozzarella cheese, pizza sauce, pepperoni, and bell peppers.
Lay a tortilla flat on a clean surface, and spoon about 1/4 of the filling onto one half of the tortilla.
Fold the tortilla over to enclose the filling and press the edges to seal.
Brush the tops of the folded tortillas with olive oil, and sprinkle with garlic powder or Italian seasoning if desired.
Place the tortilla pockets on a baking sheet lined with parchment paper, ensuring they don’t touch each other.
Bake in the preheated oven for 12-15 minutes, or until golden and crispy.
Remove from the oven and let cool for a couple of minutes before serving.
