Delicious Sweet Potato Casserole for Every Occasion

Ingredients
  

  • 4 medium sweet potatoes
  • 1/2 cup brown sugar
  • 2 tablespoons melted butter
  • 1/2 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 cup mini marshmallows optional

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. Peel and cube the sweet potatoes. Boil them until tender, about 15-20 minutes.
  3. Drain the sweet potatoes and mash them in a large mixing bowl.
  4. Add brown sugar, melted butter, milk, eggs, vanilla extract, cinnamon, and salt to the mashed sweet potatoes, then blend until smooth.
  5. Pour the sweet potato mixture into a greased baking dish, spreading it evenly.
  6. If desired, sprinkle mini marshmallows evenly across the top.
  7. Bake in the preheated oven for 25-30 minutes until heated through and marshmallows are golden brown.
  8. Remove from the oven and allow to cool slightly before serving.
