Ingredients
  

  • 4 boneless skinless chicken breasts
  • 1 cup ricotta cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup fresh parsley chopped
  • 2 tablespoons fresh basil chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • Black pepper to taste
  • 1 tablespoon olive oil
  • 1/2 cup marinara sauce

Method
 

  1. Prepare the chicken breasts by laying them flat on a cutting board.
  2. In a mixing bowl, combine the ricotta, Parmesan, parsley, basil, garlic powder, salt, and black pepper.
  3. Spread a generous amount of the ricotta mixture onto each chicken breast, leaving space at the edges.
  4. Secure the rolls with toothpicks or kitchen twine to hold them together during cooking.
  5. Heat the olive oil in a large skillet over medium-high heat.
  6. Add the chicken rolls to the skillet and brown on all sides, about 2-3 minutes per side.
  7. Once browned, transfer the skillet to a preheated oven at 375°F (190°C) to finish cooking.
  8. Bake for 20-25 minutes until chicken rolls are cooked through and no longer pink.
  9. Serve warm with marinara sauce drizzled over the top or on the side.
