- Preheat your oven to 400°F (200°C).
- Prepare the zucchini by dicing them into bite-sized pieces.
- In a large bowl, combine the diced zucchini, chickpeas, garlic, olive oil, oregano, salt, and pepper.
- Transfer the mixture to a greased baking dish.
- Sprinkle mozzarella and Parmesan cheese over the top.
- Top with breadcrumbs for added crunch.
- Bake for 25–30 minutes until the cheese is bubbly and golden.
- Allow to cool slightly before serving.
