Delicious and Flavorful Easy Chicken Casserole

Easy Chicken Casserole made approachable with clear cues, pantry staples, and flexible swaps.

Ingredients
  

  • 2 pounds boneless skinless chicken breasts
  • 1 cup uncooked rice
  • 1 can 10.5 ounces cream of mushroom soup
  • 1 cup chicken broth
  • 1 onion chopped
  • 2 cups mixed vegetables frozen or fresh
  • 1 cup shredded cheddar cheese
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Method
 

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine the chicken, rice, cream of mushroom soup, chicken broth, onion, mixed vegetables, garlic powder, salt, and pepper.
  3. Spread the mixture evenly in a greased 9x13 inch baking dish.
  4. Cover the dish with aluminum foil and bake for 35 minutes.
  5. Remove the foil, sprinkle cheddar cheese on top, and return to the oven for an additional 10-15 minutes.
  6. Check that the rice is cooked and the chicken is no longer pink.
  7. Let the casserole cool for about 5 minutes before serving.
