Preheat your oven to 350°F (175°C).
In a skillet, brown the ground beef over medium heat.
Add the chopped onion to the skillet and sauté until translucent.
Stir in the frozen mixed vegetables and garlic powder.
In a large bowl, combine the beef mixture with the cream of mushroom soup and uncooked egg noodles.
Season the mixture with salt and pepper to taste.
Transfer the mixture into a greased 9x13 inch baking dish.
Top with shredded cheddar cheese.
Cover the dish with aluminum foil and bake for 25 minutes.
Remove foil and bake for an additional 15-20 minutes until the cheese is bubbly.
Let it cool for a few minutes before serving.
