- Preheat your oven to 425°F (220°C).
- Wash and halve the baby potatoes.
- In a large bowl, combine the halved potatoes, olive oil, minced garlic, oregano, salt, and pepper.
- Spread the potatoes in a single layer on a baking sheet.
- Roast the potatoes for about 20 minutes.
- Remove the potatoes from the oven and sprinkle with grated Parmesan cheese.
- Return the potatoes to the oven and roast for an additional 10-15 minutes.
- Garnish with fresh herbs if desired and serve hot.
