Ingredients
  

  • 2 lbs baby potatoes
  • 4 tablespoons olive oil
  • 4 cloves garlic minced
  • 1 cup grated Parmesan cheese
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Method
 

  1. Preheat your oven to 425°F (220°C).
  2. Wash and halve the baby potatoes.
  3. In a large bowl, combine the halved potatoes, olive oil, minced garlic, oregano, salt, and pepper.
  4. Spread the potatoes in a single layer on a baking sheet.
  5. Roast the potatoes for about 20 minutes.
  6. Remove the potatoes from the oven and sprinkle with grated Parmesan cheese.
  7. Return the potatoes to the oven and roast for an additional 10-15 minutes.
