Ingredients
  

  • 1 pound of boneless skinless chicken breasts
  • 1 cup of orzo pasta
  • 2 cups of chopped broccoli florets
  • 2 cups of chicken broth
  • 1 cup of shredded sharp cheddar cheese
  • 1 medium onion diced
  • 2 cloves of garlic minced
  • 1 tablespoon of olive oil
  • Salt and pepper to taste
  • 1 teaspoon of dried thyme

Method
 

  1. Heat olive oil in a large pot over medium heat.
  2. Add the diced onion to the pot and sauté until translucent, about 3-5 minutes.
  3. Stir in the minced garlic and sauté for another minute until fragrant.
  4. Add the chicken breasts to the pot and cook until browned on both sides, about 6-8 minutes.
  5. Pour in the chicken broth and bring the mixture to a boil.
  6. Add the orzo and broccoli, stirring gently to combine.
  7. Reduce heat to a simmer, cover the pot, and let cook for 10-12 minutes.
  8. Once the orzo is tender, stir in the shredded cheddar cheese until melted and creamy.
  9. Season with salt, pepper, and dried thyme to taste, adjusting as needed.
  10. Serve hot, garnished with additional cheddar cheese or thyme if desired.
