Ingredients
  

  • 4 medium sweet potatoes
  • 1 cup fresh cranberries
  • 1 large apple diced (such as Granny Smith)
  • 1/2 cup maple syrup
  • 1/2 cup Greek yogurt
  • 1 teaspoon ground cinnamon
  • Salt and pepper to taste

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. Wash and pierce the sweet potatoes with a fork.
  3. Bake the sweet potatoes for 45-50 minutes until tender.
  4. While the sweet potatoes bake, prepare the cranberries and apples.
  5. In a saucepan, combine cranberries, apples, and a splash of water; simmer for 5-7 minutes.
  6. Remove the sweet potatoes from the oven and let cool for a few minutes.
  7. Cut the sweet potatoes in half lengthwise and scoop out the insides into a mixing bowl.
  8. Add the maple syrup, Greek yogurt, cinnamon, and the cranberries and apple mixture to the sweet potato flesh; mix well.
  9. Taste the mixture, season with salt and pepper, and adjust sweetness if necessary.
  10. Spoon the mixture back into the sweet potato skins and return them to the oven for another 20 minutes.
  11. Serve warm, garnished with fresh cranberries or a sprinkle of cinnamon if desired.
