- Heat olive oil in a large pot over medium-high heat.
- Add the beef in batches, browning all sides.
- Remove the beef and set it aside.
- Add the diced onions and garlic to the pot; sauté until softened.
- Return the beef to the pot and add the carrots and potatoes.
- Pour in the beef broth, thyme, and bay leaf; stir to combine.
- Bring the stew to a boil, then reduce heat and cover.
- Allow the stew to simmer for at least 1.5 to 2 hours.
- Season with salt and pepper before serving.
