Ingredients
  

  • 2 pounds beef chuck cut into 1-inch pieces
  • 4 cups beef broth
  • 3 tablespoons olive oil
  • 2 medium onions diced
  • 4 cloves garlic minced
  • 4 carrots sliced
  • 3 potatoes cubed
  • 2 teaspoons dried thyme
  • 1 bay leaf
  • Salt and pepper to taste

Method
 

  1. Heat olive oil in a large pot over medium-high heat.
  2. Add the beef in batches, browning all sides.
  3. Remove the beef and set it aside.
  4. Add the diced onions and garlic to the pot; sauté until softened.
  5. Return the beef to the pot and add the carrots and potatoes.
  6. Pour in the beef broth, thyme, and bay leaf; stir to combine.
  7. Bring the stew to a boil, then reduce heat and cover.
  8. Allow the stew to simmer for at least 1.5 to 2 hours.
  9. Season with salt and pepper before serving.
